Prep Time: 30 minutes

Resting Time: 4 hours

Servings: 3 Cups

Ingredients:

Instructions:

  1. Add almonds, cashews, and pistachios in a bowl. Cover with cold water and let soak for 4hours to overnight.
  2. Drain away the soaking water. Then, peel the almond skins off and add the almonds to a blender along with the cashews and pistachios.
  3. Then add in the pumpkin seeds, poppy seeds, cardamon, cinnamon, fennel seeds, saffron, black peppercorns and rose water (if using). Blend until the mixture becomes a coarse paste.
  4. Slowly add in ½ cup of milk and continue to blend the mixture until it becomes a smooth paste. The smoother the better.
  5. Next, in a pot over medium heat, bring to a boil the remaining milk (2 ½ cups) and the sugar.
  6. Then add your spice mixture to the milk and stir well until well combined.
  7. Turn off the heat, cover the mixture and allow it to rest for at least 4 hours, best overnight, in the refrigerator for the flavour to develop.
  8. Once ready to serve, strain the mixture through a sieve and pour into your serving glasses. Add ice cubes if desired and garnish with chopped nuts.
