Minn Bouilli aka boiled noodles, is commonly sold in small hacker styled Chinese restaurants. The noodles are often the base for a variety of different toppings, which you can choose from. Sautéed chicken, beef, the typical “boulettes” or just with a simple fried egg and spring onion. Grab a bowl of boiled noodles and top it off with all sorts of ingredients and you’ve got yourself a comforting meal.

For our version, we’ve kept it simple, with the famous Mauritian tomato salsa “chatini” and a fried egg. However, you can jazz it up how ever you wish, the options are limitless.
- Vegan with stir-fried tofu and shiitake mushroom. Leafy greens, bean sprouts or smoked eggplant.
- Top it off with minced stir-fried chicken or beef
- Spice it up with a Chinese five spiced marinated chicken
