As strange as it sounds, you just have to take the orange dump it into a pot of water and let it boil until the orange softens. Trust me, there’s a method to this madness. The flavors boiled oranges bring to this cake compared to just using the zest or juice of the oranges is next level. And this step can be done well in advance too.

While I cannot say that this flourless orange almond cake is a healthy one, as it contains sugar; it is definitely healthier than your regular butter, oil and flour cake. That’s if you’re eating it without the cream cheese frosting, which is creamily rich and worth every extra calorie. Let’s be honest – cakes aren’t meant to be healthy.
Well, you can try substituting the castor sugar for a natural sweetener like honey. But while I haven’t tried it out myself, why not give it a go for a healthier sugar free version.
