Delicious Yaki Udon with Shrimp

We love a good noodle dish and this Yaki Udon with Shrimp is one of our go to recipes because it's so easy and versatile. You can use what you have in your fridge readily available to whip up this delicious meal; also great for meal preps for the week on a Sunday.

For this recipe we've used dehydrated Udon noodles we found at the groceries available in Mauritius, but feel free to adapt this to any type of noodle really. From fresh to dehydrated ones you'll want to cook them as per the pack instructions to get the right done-ness on it.

The versatility of a stir fry

You can adapt this Yaki Udon with Shrimp in a variety of ways: replace the shrimp with chicken, beef, pork or eggs even! Throw in other ingredients you have on hand like mushrooms, carrots, bok choy and more. What we love about stir fries is that it lends itself to so many ingredients that mix perfectly together to bring a delicious dish. We typically try to use up what we have in the fridge and get creative what we already have to not make any waste or over buy.

This Yaki Udon with Shrimp recipe is inspired by the Japanese Yaki Udon stir fry, however you'll see that we've simplified it to ingredients that are more or less available in your pantry already rather than having to buy specific sauces you don't use often. Also, in Mauritian grocery stores you might not find many readily available Japanese products or sauces, but you could try your luck in Chinatown's Chinese stores where you'll often find Japanese and Korean products.

Delicious Yaki Udon with Shrimp

Prep Time: 15 minutes

Cook Time: 30 minutes

Total Time: 45 minutes

Ingredients:

Instructions:

  1. Mix regular soy sauce, sesame oil and marinate the shrimp for atleast half an hour
  2. Boil the noodles according to the package instructions then drain and rinse under cold water. Drizzle a little bit of oil and set aside
  3. Heat 1 tablespoon of oil in a wok or pan on medium high heat and stir fry the shrimp until cooked through remove and set aside
  4. In the same wok or pan on medium heat add 2 tablespoons of oil, toast the minced garlic for 1 minute then add the onions and white part of spring onions. Stir for 2-3 minutes.
  5. Add the dark soya sauce, oyster sauce, rice vinegar and mix for 1 minute until the sauce is sizzling
  6. Add back the shrimp and mix well until well coated and finally add in your noodles on high heat and toss until everything is evenly coated for about 4-5 minutes
  7. Add the green parts of the green onions and mix one last time before serving
