Noodles with tomato salsa and fried egg is a recipe that brings us back to our roots – Mauritius! Commonly known as “Minn Bouilli Chatini ek di zeuf frire in the Mauritian context, this recipe is a real fusion of cultures.

This recipe is the perfect representation of Mauritius, being a melting pot of different cultures. Perfectly boiled noodles topped with a refreshing tomato salsa, a fried egg and a garlic soy sauce. You will never find a noodle dish like this anywhere else in the world

Minn Bouilli aka boiled noodles, is commonly sold in small hacker styled Chinese restaurants. The noodles are often the base for a variety of different toppings, which you can choose from. Sautéed chicken, beef, the typical “boulettes” or just with a simple fried egg and spring onion. Grab a bowl of boiled noodles and top it off with all sorts of ingredients and you’ve got yourself a comforting meal.

Make it at Home!

Make you own Minn Bouilli at home! It only takes a few minutes to prep and only requires a few ingredients for it to be delicious! Lunch or dinner in the blink of an eye!

For our version, we’ve kept it simple, with the famous Mauritian tomato salsa “chatini” and a fried egg. However, you can jazz it up how ever you wish, the options are limitless.

  • Vegan with stir-fried tofu and shiitake mushroom. Leafy greens, bean sprouts or smoked eggplant.
  • Top it off with minced stir-fried chicken or beef
  • Spice it up with a Chinese five spiced marinated chicken

Ingredients

  • For the noodles
  • 1 packet (500g) Master Minn fresh noodles

  • 4 eggs

  • 5-6 cloves of garlic, minced

  • 2 tbsp light soy sauce

  • 1 tbsp dark soy sauce

  • Pepper, to taste

  • Handful of spring onions, chopped

  • Vegetable oil

  • For the tomato salsa
  • 3 big tomatoes (or 4-5 medium), diced

  • 1 medium onion, minced

  • Handful coriander, roughly chopped

  • Olive oil or vegetable oil

  • Salt and pepper, to taste

  • Lemon juice or vinegar, optional

Directions

  • For the tomato salsa
  • Dice your tomatoes and set aside in a bowl. We recommend using Roma tomatoes for this recipe.
  • Mince the onion and add it to the tomatoes.
  • Season the tomatoes and onion with salt and pepper, drizzle a little olive oil and a squeeze of lemon juice or vinegar. Mix well.
  • Add in roughly chopped coriander when ready to serve.
  • For the noodles
  • Heat ½ tbsp of vegetable oil in a frying pan over medium heat and fry 4 sunny side up eggs, then set aside.
  • In the same pan, heat 2 tbsp of vegetable oil. Then add in the minced garlic and let it brown and release its fragrance on low heat, about a minute or so. Keep stirring to ensure the garlic does not burn. Set aside in a small bowl.
  • In a small bowl, combine the light and dark soy sauces and set aside.
  • Cook the noodles as per the instructions on the packet.
  • Once cooked, drain the noodles and transfer to a bowl. Mix in the fried garlic oil and the soy sauce mixture.
  • To serve: Top with tomato salsa, egg and spring onions. Bon Appetit!
