Ready in less than 15 minutes, the combination of the peppery bitter arugula with the sweetness of the cranberries, tanginess of the pears and the crunchiness of the walnuts, makes this salad perfect for any holiday or special occasion.
If you do not fancy the bitterness of arugula, you can opt for baby spinach instead, it pairs beautifully with all the other ingredients as well.

250g Arugula (rocket)
50g walnuts, roughly chopped
3 tbsp dried cranberries
75g feta cheese
1 pear
Juice of 1 lemon
Balsamic reduction, to serve
Directions
- Slice the pear and dip them into the lemon juice to prevent them from browning, then set aside.
- In a salad bowl, place the arugula, walnuts, cranberries, feta cheese and pear
- Drizzle with the balsamic reduction before serving
