What we love about cooking is that you can always make it your own. Whether you like your salsa more salty or tangy, your eggs cooked less or more. Your bacon can be more crispy or more tender. Always tweak a little bit to make it the way you like it.
In this recipe we’ll be making scrambled eggs, bacon and salsa. However you can definitely use, avocados, beans, turkey bacon, roast chicken or ham. The list goes on and on!
This quick breakfast burrito with fresh salsa came to us during confinement. Because we got tired of eating the usual cereal with milk, or cookies and tea everyday. In Mauritius we don’t have a Mexican joint or Mexican cuisine restaurant. But having lived in Canada and Australia, where the variety of cuisines is abundant we started missing it.
We finally had more time in the mornings to prepare a different kind of breakfast without rushing off to the office. This is a great breakfast to make on the weekends too in the morning for the family. Or why not even for lunch or dinner? Breakfast for dinner? We say yes!

Quick Breakfast Burrito with Fresh Salsa

- Fresh Salsa
2 tomatoes diced into small cubes
¼ chopped onion
¼ cup chopped coriander
A dash of lemon juice
A pinch of cumin
A pinch of salt
A pinch of pepper
- Scrambled Eggs
2 eggs
½ cup grated cheddar cheese
⅛ cup milk
1 tablespoon butter
A pinch of salt
A pinch of pepper
- Bacon slices
- Tortilla wraps
Directions
- In a bowl, add onion salt, peper, cumin and lemon juice, mix well and let sit for a few minutes
- Add in the tomatoes and coriander and mix well, taste and add salt, pepper and cumin to taste if necessary and set aside
- Whisk eggs, milk, salt, pepper and grated cheese in a bowl
- In a pan on low medium heat, melt butter, once melted pour in your egg mixture and gently but constantly stir the mixture so that the cooked bottom of the scrambled eggs come up and the liquid cooks
- When it has reached a thick mixture but not dry remove
- In a separate pan fry bacon slices
- On a wrap starting at the side closest to you, lay a horizontal layer of scrambled eggs followed by the bacon slices and top it off with the salsa leave enough space on the two sides
- If you like yours toasty, feel free to lightly press the burrito in a panini maker or grill it on a pan for some crunch
