Quick Breakfast Burrito with Fresh Salsa

Quick Breakfast Burrito with fresh Salsa

Looking for a breakfast idea that changes from your usual cereal and milk? It’s as quick as it is easy to make! Even those who don’t cook very often can make this quick breakfast burrito with fresh Salsa.

Make it your own!

What’s great about this recipe is that you have complete freedom to make it your own! You can add ingredients and toppings to your liking. What we love about cooking is that you can always make it your own. Whether you like your salsa more salty or tangy, your eggs cooked less or more. Your bacon can be more crispy or more tender. Always tweak a little bit to make it the way you like it.

In this recipe we’ll be making scrambled eggs, bacon and salsa. However you can definitely use, avocados, beans, turkey bacon, roast chicken or ham. The list goes on and on!

This quick breakfast burrito with fresh salsa came to us during confinement. Because we got tired of eating the usual cereal with milk, or cookies and tea everyday. In Mauritius we don’t have a Mexican joint or Mexican cuisine restaurant. But having lived in Canada and Australia, where the variety of cuisines is abundant we started missing it.

We finally had more time in the mornings to prepare a different kind of breakfast without rushing off to the office. This is a great breakfast to make on the weekends too in the morning for the family. Or why not even for lunch or dinner? Breakfast for dinner? We say yes!

Let’s do this!
