If you’re looking for a dessert that’s easy to make, absolutely delicious, and guaranteed to impress, I can’t recommend these No-Bake Strawberry Cheesecake Verrines enough. Trust me, once you try them, they’ll become one of your favorites too. Happy no-baking!

Why These Verrines Are Always a Hit

  1. Easy Yet Impressive: No need to turn on the oven! These cheesecake verrines are quick and fuss-free.
  2. Perfect Portions: The individual jars make them ideal for serving guests—or sneaking one for yourself without sharing.
  3. Fruity and Fresh: The homemade strawberry coulis adds a burst of flavor that complements the creamy cheesecake perfectly.
  4. Make-Ahead Magic: Prepare them in advance, and they’re ready to go when you need them.

Tips for Making the Perfect Verrines

  • Cold Cream for Success: Whip your heavy cream straight from the fridge to ensure those perfect stiff peaks.
  • Soften the Cream Cheese: This makes it easier to mix and ensures a smooth, lump-free cheesecake layer.
  • Coulis Consistency: Mash the strawberries slightly while cooking to release their juices. You can strain the sauce for a smoother finish or leave it rustic with fruit chunks.
  • Layer with Love: Take your time to spoon each layer gently for those picture-perfect jars.
  • Garnish to Impress: Add a sprig of mint, a fresh strawberry slice, or even a sprinkle of biscuit crumbs on top for that final flourish.

Make Ahead and Storage

One of the best features of this dessert is its make-ahead nature. Assemble your verrines, refrigerate them for at least two hours, and they’ll be ready to serve when needed. Stored in airtight containers, or covered with a plastic film, these cheesecake jars stay fresh for up to three days in the refrigerator, making them ideal for meal prep or party planning.

Instructions:

For the cheesecake:

  1. Crust: Melt the butter in the microwave in a medium heat-proof bowl. Stir in the crumbed digestive biscuits. The mixture will resemble wet sand. Spoon a generous spoonful into your jars/verrines. Set jars aside.
  2. Filling: Using a hand mixer or a stand mixer fitted with a whisk attachment, whip the cold heavy cream into stiff peaks on medium-high speed, about 3-4 minutes. Set aside.
  3. Using a hand mixer or a stand mixer fitted with a whisk, beat the cream cheese, sugar, sour cream, lemon juice, and vanilla extract together on medium-high speed until smooth and creamy.
  4. Using your mixer on low speed, fold the whipped cream into the cheesecake filling until combined.
  5. Divide the cream cheese filling and layer a couple large spoonfuls of filling on top of the crust in each jars.
  6. Spoon strawberry coulis on top and garnish with fresh strawberries.
  7. Refrigerate for at least 2 hours and serve chilled

For the Strawberry Coulis

  1. Whisk the cornstarch and water together until all the cornstarch has dissolved.
  2. Place the cornstarch mixture, along with the rest of the ingredients, into a small saucepan over medium heat. Using a wooden spoon, stir the mixture as it cooks. Break up some of the strawberries as you stir.
  3. Bring it to a simmer and allow to simmer for 5 minutes, stirring constantly. After 5 minutes, remove pan from the heat and allow to cool. The mixture will thicken as it cools.
